PURE LIVING WINE

Our vineyards were born on sandy and silty terrain. Here the lambrusco grapes find their maximum expression.

We trace and trasform in wine old lambrusco types that were ancestrally born to produce an excellent produce.

Although production volumes might be limited the enological qualities of these grapes are almost incredible.

During autumn we plant Sovescio plant varieties in alternate rows to create biodiversity in the vine plantation then cut it and bury it in spring. As a fertilizer we use our byodinamic manure.

The meteorological station and the fungus prevention sensor system helps us to intevene only when strictly necessary and an atomizer increases their effectiveness not allowing the specific product to disperse.

Artificial irrigation is not part of our practices. We try to push the roots of our vines deeply in order to be self-reliant and water independent.

We believe in our biodynamic approach because we strongly believe that it is the right thing to do to preserve the health, biodiversity and vitality of our soil. The quality of our wines speak for itself.

The final objective is to bring to the vinification process only vibrant and healthy grapes. In this way we only need to follow the flow with no further intervention.

This is the origin of our wines. All of them are bottled adding must. Then the indigenous , natural yeasts start the secondary fermentation and they then deposit at the bottom of the bottle.

This is our recipe that leads to sparkling wines that are particularly persistent and that can be savoured in the long term.

Wine as an expession not merely of simple tecnique but the result of a living organism that enpowers it from within.

We live Lambrusco like an ideal companion for our meal: nourishing and entertaining.

We like to call it PURE LIVING WINE.

OUR WINES

STEVE

WHITE - SPARKLING - REFERMENTED IN BOTTLE

We successfully managed to give a light and positive, carefree vibe to our Grechetto Gentile. Very soft on the palate , acidic and , if savoured in its early stages, with tropical notes.

Variety: Grechetto Gentile (100%).

PERFRANCO

ROSÈ - SPARKLING - REFERMENTED IN BOTTLE

In memory of the old village social clubs frequented by Gianfranco Bergianti here it is: Perfranco. Born from an ancient Salamino di S. Croce vine clones, its grapes are slender and compact. Fresh and citrusy with hints of grapefruit escaping from the classical parameters of this variety.

SAN VINCENT

ROSÈ - SPARKLING - REFERMENTED IN BOTTLE

The name derives from a trip to France, in the chanpagne area during the patron feast that protects wine and winemakers. Produced from an ancient lambrusco Sorbara clone, it is a wine with an acidic side to it with hints of salty raspberry.

Variety: Lambrusco Sorbara (100%).

NOAUTOCLAVE

RED - SPARKLING - REFERMENTED IN BOTTLE

The base for this wine is Salamino but we added all of our varieties including the bacca bianca ones. A wine that is screaming from the top of its lungs : this is the emilian tradition of refermented wines ! Of course, NO autoclave needed.

Variety: Lambrusco Salamino di S.Croce, Lambrusco Sorbara, Pignoletto in varying pencentages depending on the year.

STIOLOROSSO

RED - SPARKLING - REFERMENTED IN BOTTLE

Born from an idea of Gabriele Ronzoni following and ancient recipe dating back to the 1800s. 

Variety: Ancellotta (25%), Lambrusco Oliva(25%), Lambrusco Sorbara (50%).

MOSTANG

ROSÈ - SPARKLING - ANCESTRAL

The left over must continues its fermenting journey and is bottled and refermented. Our Super MUST!

FINE

ROSÈ - METODO CLASSICO

Although technically out of the DOC Sorbara area, these vines find their ideal terrain with sand and lime that boost their charachteristics. We strongly believe that Sorbara is the ideal variety for the champenoise. A long refinement brings to us a vibrating wine persistent and light at the same time.

Variety: Sorbara (100%).

ROSSO

RED - METODO CLASSICO

Our take on the Lambrusco salamino di Santa Croce. Lively with good acidity reaches its peak after quite a long period of refinement. A perfect complement for your table.

BZZ

ROSÈ - SPARKLING - ANCESTRAL

A unique project in itself. Grapes are withered for approximately 15 days in beehives. It is bottled before the actual fermentation process is completed.

BIANCO

WHITE - STILL

This wine was born from 4 specific vine rows, result of a specific selection out of an ancient estate on the Bologna hills. The acacia barrel gives softness whilst respecting the original qualities. This is our take on Grechetto gentile.

OLIVIA

RED - STILL

A variety that is nowadays almost disappeared or rarely used. It is harvested at the end of the season. Having low acidity it does not go through secondary fermentation.

Variety: Lambrusco Oliva (100%).

WHITE - STILL

In memory of the chess matches played with Rino. This wine originates from a small vine of 17000 M2. A mixture of white varieties all mixed together.

Variety: Malvasia, Moscato, Trebbiano di Modena in different percentages depending on the year.
